Quercetin, a naturally occurring flavonoid and pigment, is found in many plants and foods and gives many fruits, vegetables and cereals their bright colors. It belongs to the group of bioflavonoids, a subclass of polyphenols that are widespread in the plant world. These aromatic compounds are not only responsible for the coloring of flowers and leaves, but also serve as a protective shield for plants against certain environmental factors.
Our quercetin comes specifically from the Japanese string tree, a natural source of this powerful plant substance. It is found particularly in the outer layers of plants and fruits, including grapes, apples and onions. However, when the skins are removed, the quercetin content drops dramatically.
The name “quercetin” is derived from “quercus”, the Latin word for oak, in whose bark particularly high amounts of this polyphenol have been found. However, it should be noted that the outer layers of other tree species also have a high content of this potent flavonoid.
